30 min Daal Recipe

Makes 4 servings
2 cups of mixed daal or just use a combination of red and yellow lentils, rinsed ( remove 1/2 cup for more soupy consistency)
2 tablespoon vegetable oil
1 teaspoon cumin seeds
1 teaspoon of mustard seeds
1/2 teaspoon fenugreek seeds (optional)
2 red dry chili peppers
1 cup diced red onion
4 garlic cloves, minced
1 tablespoon finely minced ginger root
1/2 teaspoon ground turmeric
1/2 teaspoon ground cardamom
1/2 teaspoon garam masala or 1 tsp curry powder (optional)
1 teaspoon salt or to taste
1 tbsp of tomato paste or 2 fresh tomatoes chopped
1 qt (32oz) vegetable stock or broth
Juice of one half a lime
Chopped cilantro leaves for garnish
Heat the oil in the medium saucepan over a medium heat. Add the cumin, mustard, fenugreek seeds ed by chili papers. Fry it for few seconds. Add the onions and sauté until onions are soft, then add the garlic, ginger, turmeric, cardamom, garam masala and tomato paste or fresh tomatoes. Sauté for 5 min until all the aromas are released. Add the washed lentils to the pot then combine all together. Slowly add the vegetable stock. Mix the daal to make sure the mixture is not sticking to the bottom of your sauté pan. Bring it to boil then simmer for 20 min until daal is soft. Serve the daal with chopped cilantro, coconut yogurt, naan and lime wedges. Enjoy.
