Have you ever tried making Tofu “Feta”? Check out this Warm Kale and Roasted Veg Salad with Za’atar Tofu Feta by leeksnbeets 🌿
IN THIS BOWL 👉🏻 A base of green kale and raw shredded brussels sprouts massaged with olive oil and topped with a mix of white jasmine and forbidden rice, cherry tomatoes, kalamata olives, red onion, avocado, air fried citrus ginger cauli and sweet potatoes, za’atar tofu feta, pumpkin seeds and sunflower seeds.
❇️ FOR THE TOFU FETA ⤵️
🔹1 block super firm tofu, cubed (the kind I use comes already pressed, if using extra firm tofu instead you’ll need to press it beforehand)
🔹½ cup water
🔹2 tbsp olive oil
🔹2 tbsp nutritional yeast
🔹1½ tbsp lemon juice
🔹1 tbsp mellow white miso
🔹1 tbsp apple cider vinegar
🔹1 tbsp za’atar
🔹1 tsp garlic powder
🔹1 tsp sea salt
👉🏻 Combine all ingredients aside from the tofu in a jar with an airtight lid and shake to combine. Then add the tofu to the jar, making sure all the cubes are fully submerged. Chill at least 4 hrs or overnight and enjoy!
