Looking for a delicious noodle recipe? Check out this bowl of Vegan Teriyaki “Beef” Udon Stir Fry

It’s easy to make and ready in 15 mins. Add any veggies you’d like, I used snow peas, oyster mushrooms and carrots. This sauce is flavourful, yet simple to make and so good! Save this recipe for the perfect weeknight dinner! Get the recipe:

Ingredients:
2 bricks of frozen udon noodles (approx 500g)
1 tbsp vegetable oil
1 cup vegan beef strips
1 cup snow peas, sliced & trimmed
1 cup oyster mushrooms, sliced
1 carrot thinly sliced
1 tsp minced garlic

Sauce:
3 tbsp tamari or soy sauce
2 tbsp brown sugar
1 tbsp rice vinegar
1 tsp sesame oil
2 tsp dark soy sauce
1 tsp grated ginger
1/3 cup water
Mix all above ingredients to make the sauce

Method:
To thaw udon noodles, microwave for 1-2 mins or until just thawed, set aside. Heat a large nonstick pan over medium high heat, add olive oil and the vegan beef strips, cook for 3-4 mins, set aside on a clean plate and then add the carrots, mushrooms, snow peas and garlic cook for 5 mins or until crisp tender. Add back in the vegan beef strips, thawed udon noodles, and sauce. Stir and mix until sauce evenly coats the veggies and noodles. Once everything is nice and hot, transfer to a serving plates and garnish with cilantro, and sesame seeds.
