Mushroom Avocado Toast 🥑
1 tbsp coconut oil
8 oz/227 g cremini mushrooms, sliced
pinch sea salt
2 slices toast of choice
pine nuts, for sprinkling
1. Sauté coconut oil, mushrooms and salt in a medium skillet on medium-high heat until brown and soft, about 12 minutes.
2. Smash avocado onto bread slices and top with the browned mushrooms, sprinkle with pine nuts more sea salt and serve.
