SUPER CREAMY PESTO PASTA N ZOODLES 🌟

✨ courgetti (1 courgette – spiralised)
✨ silken tofu (1/2 block)
✨ vegan green pesto (the more the better tbh)
✨ 1/2 onion, chopped
✨ artichoke hearts (1/2 can, drained & chopped)
✨ frozen peas
✨ cashew parmesan
~> just boil the pasta in salted water & whilst it’s cooking spiralise the courgette & make the sauce
~> blend the tofu & pesto
~> sauté the onion until soft, then add the artichoke hearts & warm through
~> in the last 1 min add the peas to the pasta
~> drain the pasta & put back in the pan with the courgetti, add the onion & artichoke hearts and the tofu pesto
~> serve with cashew parmesan! Enjoy!
