Super Crunchy Grilled Herbed-Oil Bread Slices topped w/Almond Ricotta & Garlic Roasted Tomatoes❤️

📋INGREDIENTS
for the ricotta:
250 g almonds (soaked overnight)
7 dl water
1 tbsp lemon juice
for the tomatoes
250 g cherry tomatoes
5 tbsp olive oil
2 garlic cloves (minced)
1 tsp fresh thyme (minced)
for the bread
6-8 bread slices
6 tbsp olive oil
2 garlic cloves (minced)
1 tbsp fresh rosemary (minced)
METHOD
Drain and rinse the almonds then place them in a food-processor, add in water and process until creamy. Strain the mixture using a milk bag.
Pour the milk in a saucepan and heat over medium heat. Just before it starts bubbling take away from heat, add in lemon juice, stir well and let cool completely.
Once cold pour it in a cheese cloth and let drain overnight or during a couple of hours.
Once drained place in a bowl.
for the tomatoes, place oil, garlic and thyme in a bowl and stir. Place the tomatoes atop a sheet of foil then drizzle with herbed oil. Fold up the foil to create a tight packet and grill for 20-25 minutes.
For the bread, place olive oil and garlic in a bowl and stir, then brush the bread slices and grill them for 5 minutes (until golden and crunchy).
Spread the ricotta over the bread slices, top with the tomatoes, adjust salt and pepper and serve.
