INGREDIENTS:

For the tofu:
8 oz extra firm tofu cut into strips
1 tbsp corn starch
1 tbsp ancho chili powder
1/2 tbsp chili powder
1 tbsp Nutritional yeast
1 tbsp tamari
1 tbsp Oil

Coat the tofu with the corn starch. Mix together the other dry ingredients and toss the tofu (gently ) I the mixture
Hear the oil over medium high heat in a flat pan. Add the tofu and do not touch for at least 3-4 minutes, add the Tamari, flip the tofu and cook another 3-4 minutes.

12 baby bell peppers cut into strips
1/2 large yellow onion chopped
1 clove garlic
1 tbsp oil
1 tbsp oregano
Salt and pepper
Heat the oil in a flat pan
Sauté the garlic, onion and pepper and oregano for a few minutes until a little softened but still crunchy

For the rest:
Small street size tortillas
Fresh salsa (Tomatoes, onion, cilantro)
Lime
Avocado
Fresh cilantro
Shredded vegan cheddar
Bed of mixed greens
