Who else is pasta OBSESSED? 🙌🏼
This recipe from veganbyeden is loaded with veggies and you can adapt it to use any seasonal veg 🫑
✅ RECIPE ✅ serves /
1 tbsp olive oil for cooking
1 cloves garlic
1 small carrot, diced
Handful mushroom cups, diced
1/2 cup Flexible Foods plant based mince
1 cup cherry tomatoes
1/2 cup frozen peas
1 tbsp tomato paste
1 cup veggie or vegan chicken stock
Pasta for 2
1 tsp oregano + basil
Handful baby spinach
Salt & pepper to taste
Plant based meat
1️⃣ Bring a large pot of water to the boil, salt generously and cook pasta according to packet instructions.
2️⃣ In a separate pan heat the olive oil on a medium heat. Add garlic, carrot, mushroom, tomatoes and peas.
3️⃣ Cook for a few mins, then add the plant based mince and veggie or chicken stock. Lower heat to a low.
4️⃣ Stir and cook for a further 2-3 mins.
5️⃣ Add the tomato paste, herbs, salt & pepper. The liquid stock should be soaked up. Add the cooked pasta and a little of the pasta water (I used about 1/4 cup)
6️⃣ Stir through, add the spinach last, stir and remove from heat. Serve with a sprinkle of cashew parmesan 👌🏽
